Make Room For 'Shrooms

Saving money while eating delicious food is easy! And it can be lots of fun, too. Sometimes the best food comes from looking in your fridge to see what's leftover. That's what I'm doing today to celebrate National Stuffed Mushroom Day.

The first thing I found when I opened the refrigerator door was last night's spaghetti and meatballs. So I washed a few mushrooms and gently pulled out their stems. (You should always keep some 'shrooms on hand! They enhance almost any food from veggies to meats and stews.) I chopped up a little bit of spaghetti and meatballs, stuffed the mushroom caps with the mixture, and sprinkled a little bit of Parmesan cheese on top. I placed them onto a cookie sheet coated with olive oil cooking spray, and popped them into an oven preheated to 400 degrees. 5 minutes later they were ready to serve as a delicious hors d'oeuvre or entree.

 

That was so easy I decided to do a little mushroom tapas to serve for dinner. So I grabbed the leftover cooked mixed rice I'd made for dinner earlier in the week and blended a bit of Parmesan Cheese into it. The rice was already sufficiently seasoned with salt and pepper since I'd used it as a side dish, so I filled a few more cleaned mushroom caps with the rice and cheese mixture and cooked them off just the same way I'd cooked the spaghetti-stuffed ones. The result was delicious! And it made a pretty plate, too, especially when mixed in with the stuffed-spaghetti 'shrooms.

 

I wanted to add a few cold options to my tapas spread, so I stuffed several cleaned caps with some egg salad I'd made for yesterday's lunch, some red bell pepper hummus I had on hand,and some yummy coleslaw made for the Stuffed Pretzel Surprise Sandwiches I served for Superbowl Sunday. I'm sworn to secrecy about the ingredients of that slaw, but I guarantee the unique flavor combinations will please your palate.
